IMG_0957I’m trying to desperately hold onto that wonderful summer feeling before the weather supposedly turns tomorrow, so I decided to make a summer fruits pavlova as a treat for pudding this evening (inspired by the Tropical Fruits Pavlova I saw whilst browsing through Mr Whaites Bakes).

Not sure what made me scale my Meringue Recipe to 5 eggs/285g caster sugar, but I ended up making a Monster Pavlova that would probably feed 12-16 rather than just the four of us.  I then smothered it in whipped cream (infused with a teaspoon of vanilla paste) and a mountain of summer fruits.  We did manage to make a significant dent in it, but still plenty more for us for tomorrow.  Just wish we could say the same for the sun.
