Popsy’s 6th Birthday
Hello Kitty Cake:
I wanted to make my daughter something girly for her 6th birthday, and I also wanted to go a bit off-piste with my decoration by shunning my box of cutters and doing something original/custom.
I created a Victoria Sponge, flavoured with the zest of 2 lemons and lemon sugar syrup and sandwiched together with lemon curd and vanilla buttercream. I then coated the cake in a layer of white sugar paste.
I traced the Hello Kitty picture from a book and cut templates out of thick card for each of the different icing colours required. I used a craft knife to cut round the templates onto rolled out sugarpaste, before layering on top of the cake (black for the base, with the white and red on top). I used a small paintbrush and some of the remaining sugar syrup to stick the sugarpaste to the cake.
